Fondant is naturally a sticky medium to work with, *especially* in humid weather conditions.  When it’s hot and humid, fondant turns into a soft and sticky mess that refuses to hold its shape (it’s frustrating to say the least). I live in sunny Queensland, Australia and I deal with this type of weather on a regular basis. Let me share with you my top tips for overcoming this issue.

First and foremost, climate control is key. Whenever I work with fondant, I work in an air-conditioned room. This lets me take charge and create the perfect fondant-friendly working environment. In times of high humidity, I switch my air con to 'dry mode,' which cools the room while getting rid of that excess moisture. Your fondant will thank-you!

Another lifesaving hack in the fondant decorator’s arsenal is using cornflour. Just like how flour stops bread dough from sticking, cornflour or icing sugar can be used to prevent fondant from sticking. I personally prefer to use cornflour, simply because I can’t stand the texture of icing sugar. Simply lightly dust your hands, tools and work surface in cornflour to create a non-sticky barrier.
